Caulder Moore in US burrito chain work

US burrito restaurant chain Chipotle is opening its first outlet in Europe, with design work by Caulder Moore and US architect Outfit.

Outfit, which has created a new Chipotle interiors concept for the US [pictured], is working with Caulder Moore on adapting it to the UK market.

Chipotle appointed Caulder Moore last summer, following a four-way credentials pitch, according to Caulder Moore partner Irene Maguire.

Outfit’s new design concept, which Caulder Moore senior designer David Chenery says is being piloted in Chipotle’s Manhattan locations, uses ‘innovative and exciting’ sustainable materials that will need to be replicated here.

‘The design has a reductivist aesthetic, being very stripped back, but we need to translate the materials into the European equivalents to ensure sustainability,’ says Chenery. ‘Shipping the US materials over here would defeat the point of being environmentally friendly.’

Douglas fir fittings used in the US will, in the London restaurant, be made out of Scots pine. ‘We are seeking a new supplier base, finding matches for materials or similar alternatives,’ adds Maguire.

Caulder Moore is also looking at how to apply the design to the ‘complicated’ 250m2 space on Charing Cross Road, WC2, in time for its opening in April.

Chipotle is understood to be looking at opening further sites in London, Paris and Munich. Caulder Moore has not secured a contract to work with the chain on future European openings, but ‘we hope to’, says Maguire.
