No more carb counting thanks to designer potato

Atkins advocates breathed a sigh of relief last week, when their demands for a low carbohydrate potato were finally brought to life.

The Spud-U-Lite, designed by the HZPC seed company in The Netherlands, is to be grown en masse by a potato farming co-operative in Florida. Developed through cross-breeding, the spud apparently has a lower carbohydrate content due to its lower density flesh and shorter growth time. It can only be a matter of time before McDonald’s launches low carb fries.
