The Brighton-based design consultancy was approached directly in November, after having worked with restaurant operator Rhubarb for about four years on other projects.
Design LSM was tasked with producing a concept that was ‘light, airy and not too pretentious’.
Helen Bowey, Rhubarb’s retail director, says, ‘The other brand was so pink and black it was a bit too out there. This has more of a comfortable feel – it looks comfortable and affordable.’
Bowey says that Rhubarb wanted a recognisable template on which they could build a generic brand for themselves.
Rhubarb’s managing director Pieter-Bas Jacobse says, ‘The new look is fresh, contemporary and very stylish.’
The new restaurant will open on 6 July at the south end of Terminal 3.
