But it is perceived as being out of touch with its members’ needs, says consultancy founder Andrew Zulver.

A dingy, institutional room with an excellent, but hidden kitchen has been transformed into a bright contemporary space with four differently styled areas, according to a spokeswoman for RPW. The consultancy designed The Oxford Brookes School of Hotel and Restaurant Management’s new training restaurant, which opens officially in January. The 300 000 project was funded by hotelier and restaurateur David Levin and comprises a brasserie, bar, la carte dining and private dining rooms, with a display kitchen. Brookes Restaurant is in Headington, Oxford.
