The consultancy was commissioned by Carlo di Stefano, owner of the San Carlo Group. Carroll Design previously worked on the Cicchetti restaurant in Manchester, which is also operated by the San Carlo Group.
The consultancy says the new restaurant is ‘an evolution of Cicchetti, with a more extensive bar presence’.
Bernard Carroll, director of Carroll Design, says, ‘Our approach is to create clean, contemporary interiors with striking and unusual touches.’
The consultancy has been working on the restaurant for around two months, according to fellow consultancy director Ken Carroll, and Fumo is set to open its doors in March 2012.
